Specific applications of salted boletus mushrooms

Experiments have demonstrated that co-fermenting salted boletus mushrooms with conventional kimchi ingredients can significantly reduce the content of certain compounds in kimchi. Specifically, when salted boletus mushrooms and conventional kimchi ingredients are co-fermented at a mass ratio of 1.4:1 for four days, the compound content can be reduced by as much as 97% compared to fermentation conducted solely with conventional kimchi ingredients. Preparing fermented or pickled foods using salted boletus mushrooms is cost-effective and involves a simple production process, yielding high-quality and safe fermented products. If this approach is adopted and implemented in the kimchi industry as well as other food-processing sectors, it will play a positive role in promoting sustainable development and enhancing the market competitiveness of these products.

The flesh of the mushroom is white and thick, and does not discolor upon injury. The fungal tubes are initially white, then become pale, straight or nearly paired, or slightly sunken around the stem. The pore openings are round, slightly larger at the base, and light brown or pale yellow-brown in color.
