Boletus Basics (Part 1)

Boletus mushrooms are a collective term for fungi belonging to families such as Boletaceae and Suillaceae. With the exception of a few species that are toxic or have a bitter taste and thus unfit for consumption, most varieties are edible. The main types include white, yellow, and black boletes. The white bolete is renowned for its delicious flavor and rich nutritional value. This mushroom has a large fruiting body with thick, fleshy flesh and a sturdy stem. It boasts a sweet, fragrant, and delectable taste, as well as high nutritional content, making it a world-famous edible fungus. People of all ethnic groups in Yunnan Province love to gather fresh specimens for cooking and consumption. In Western European countries, too, there is a widespread custom of eating white boletes. Besides consuming them fresh in dishes, most are sliced, dried, and processed into various small-packaged products—used either as ingredients for soups or as soy sauce extracts—and some are even preserved by salting. Since 1973, Yunnan Province has been exporting white boletes to Western Europe, where they have become extremely popular and consistently in high demand, far exceeding supply.

Wild Mushroom Basics (Part 4)

The green-headed mushroom primarily grows in grassy patches within forests and fruits from June to September each year. When first emerging from the ground, it has a slightly spherical shape, gradually unfolding into a flattened circular form over time. The cap has a firm texture and displays a mixed greenish-blue and white coloration. The flesh is pale white, tender, and fragrant, rich in various nutrients including protein, calcium, phosphorus, iron, sulfur, and vitamin B.

Wild Mushroom Basics (Part 3)

The Ganba mushroom, also known as the pine needle mushroom, grows under Chinese pine trees from July to September each year. This mushroom lacks a cap and gills; instead, it clusters together in a shape reminiscent of cattle teeth, which is why it’s commonly called “cattle-tooth mushroom.” When first unearthed, the Ganba mushroom has a yellow-brown color, but as it matures, it turns dark brown. Its flesh is firm and dry, rich in nutrients such as calcium, protein, and thiamine, and boasts an intense aroma strikingly similar to that of dried, cured beef. Locally, dried, cured beef is referred to as “ganba,” hence the mushroom’s name, Ganba mushroom.

Wild Mushroom Basics (Part 2)

The matsutake mushroom, also known as Songkoumou, Songmou, or Choujizong, has a cap that initially takes on a hemispherical shape before gradually expanding into an umbrella-like form. Its surface is dry and colored gray-brown or light dark-brown, while its gills are white. This mushroom grows in autumn in forests of red pine, larch, and stone pine. In Japan and Europe, the matsutake enjoys a high reputation and has long been regarded as a culinary treasure—often referred to as the "King of Mushrooms." In ancient Japan, matsutake was one of the prized offerings made by commoners to nobles and the emperor, earning the saying, "Herring roe from the sea, matsutake from the land." In the Naxi region of Lijiang, Yunnan Province, matsutake is also a highly valued dish served at wedding banquets.

Wild Mushroom Basics (Part 1)

The extraordinary qualities of wild mushrooms: Artificially cultivated mushrooms have a loose, flabby texture, a bland and unremarkable aroma, and all varieties share a similar, watery taste. In contrast, wild mushrooms boast a firm, resilient texture, diverse and unique flavors, and an intensely rich aroma. Scientific research has also shown that their nutritional value far surpasses that of artificially grown mushrooms. Thus, wild mushrooms are especially precious precisely because of their rarity.
