  The porcini mushroom boasts a delicious flavor and is rich in nutrients. With its large fruiting body, thick flesh, robust stem, sweet and delectable taste, and high nutritional value, it’s a world-renowned edible mushroom. People of all ethnic groups in Yunnan love to gather fresh mushrooms and cook them for consumption. In Western European countries, too, there’s a widespread custom of eating porcini mushrooms. Besides being served fresh, most are sliced, dried, and packaged into various small portions. Sometimes they’re used as soup ingredients, sometimes as soy sauce extracts, and sometimes they’re preserved and eaten pickled. Since 1973, Yunnan has been exporting porcini mushrooms to Western Europe, where they’ve become extremely popular and are in high demand, often selling out before they can be fully supplied.

  However, traditional preservation methods for porcini mushrooms have a short shelf life, and the dried porcini products suffer significant loss of nutrients after drying. Therefore, the objective of this invention is to provide a processing method that can both extend the shelf life of porcini mushrooms and preserve their nutritional content.

  To achieve the above-mentioned objectives, the technical solution of the present invention is as follows:

  The processing method for quick-frozen boletus mushrooms includes the following steps:

  Select fresh porcini mushrooms, wash them, dry them in the sun, and slice them into thin pieces. Rapidly freeze the porcini mushrooms, stopping when the core temperature reaches between -20°C and -16°C. After quick-freezing, dry the mushrooms by gradually raising the temperature to 72–80°C at a uniform rate within 0.4–0.6 hours, and hold this temperature for 0.8–1.3 hours. Then, gradually reduce the temperature to 67–72°C over 0.8–1.2 hours, and maintain this temperature for 1.5–2.5 hours. Next, further reduce the temperature to 50–60°C over 0.8–1.2 hours, and hold it for 2.5–3.5 hours.

  Preferably, the process is stopped when the core temperature of the porcini mushrooms reaches _18°C. The drying treatment involves raising the temperature at a constant rate to 75°C within 0.5 hours, holding it at that temperature for 1.0 hour; then reducing the temperature at a constant rate to 70°C over 1 hour and holding it at that temperature for 2.0 hours; followed by another constant-rate reduction in temperature to 55°C over 1.0 hour and holding it at that temperature for 3.0 hours.
