The porcini mushroom is a wild fungus with many varieties. With the exception of a few poisonous species that are not edible, most varieties are safe to eat. The edible varieties can be roughly divided into three categories: white porcini, yellow porcini, and black porcini.

Salted Boletus edulis Safe to eat, the mushroom has a cap diameter ranging from 6 to 9 centimeters, and its color is white or grayish-white. The flesh of the mushroom is thick and pure white. The stem is typically cylindrical, white, and has a smooth surface. This plump, white mushroom boasts a robust, round body with thick, crisp flesh and a uniquely flavorful sauce. Whether used in risotto, pasta, or even as part of a sauce, porcini mushrooms are a staple ingredient. In French cuisine, fresh porcini mushrooms are especially prized. Among all varieties, porcini mushrooms stand out for their exceptional strength—thick, fleshy caps that offer a sweet, umami-rich flavor. The cap is brown, while the stem and flesh are usually yellow or yellowish-brown. In Yunnan’s renowned shiitake hot pot, a few fresh porcini mushrooms are often added to enhance the dish; watching them slowly release their rich, savory aroma as they simmer in boiling water is truly a delightful experience. The black porcini mushroom is easily identifiable: its skin and stem are both dark black, and it carries a fresh, slightly alcoholic aroma—a highly sought-after variety. Even before cooking, the raw porcini mushroom’s aroma alone is mouthwatering. The key to fully appreciating its flavor lies in savoring it in its most natural state. A simple cooking method is all that’s needed to bring out the mushroom’s authentic taste. In general, salted boletus edulis mushrooms boast high nutritional value and deliver excellent health benefits. After the dried or sun-dried boletus edulis slices are softened, they are graded according to their visual characteristics, such as color and whether the cap is still connected to the stem. Export products are categorized into four grades. The highest-grade products must have white mushroom slices, with the caps firmly attached to the stems, free from any impurities, mold, or moths. Second-grade products require light-yellow mushroom slices, with the caps securely attached to the stems, intact and unbroken, and free from mold or moths. Third-grade products must exhibit yellow-to-brown hues, with the stems still connected to the caps, and must be free from damage, mold, or moths. Fourth-grade products may range from dark yellow to deep brown; some parts of the mushrooms may be detached from the stems, and the slices may be slightly broken, but they must remain free from mold and insect infestation. All other products are considered foreign-market items. After grading, the mushroom slices should first be packaged in food-grade plastic bags and then placed in cardboard boxes. During transportation, care must be taken to handle them gently, and squeezing or pressing them is strictly prohibited. Storage should take place in a cool, well-ventilated, dry storage room that is free from insects. In fact, after being dried and packaged, boletus edulis mushrooms come in various types. One type is directly dried boletus edulis, while the other is marinated boletus edulis. Typically, this marinated variety needs to be soaked for about 1 to 3 hours—until fully softened—before proceeding to the next step.
